
*Kent Rollins, star of the Outdoor Channel’s “Cast Iron Cowboy,” continues to bring cowboy cooking traditions to modern kitchens. One standout dish, his bison chili, combines rich flavors with high protein.
Speaking to Fox News Digital, Rollins emphasized the nutritional benefits of bison. “When [the weather] begins to cool off, I begin to have a hankering for chili,” he said. “But this is not just your ordinary chili. This is bison chili.” He described the meat as one of the leanest and “healthiest meats” a cook can use.
The preparation begins by browning two pounds of ground bison with diced yellow onions. Ro-Tel tomatoes with green chilies, tomato sauce, jalapeños, adobo sauce, and a homemade chili seasoning are added, along with beans for an extra protein boost. “You’re getting an extra push of protein from the beans,” Rollins said. “But that bison meat is going to give you a lot of protein, a lot of power.”
Rollins connects the dish to cowboy history. “This is a frontier cowboy Western heritage meal classic,” he said. “It’s always been around.”
Bison has gained popularity in recent years as a lean, high-protein meat with low cholesterol. Rollins noted that wild game is the healthiest option, and bison is more widely available than many assume, either in larger grocery stores or via online suppliers.
Cast iron cookware is central to Rollins’ approach, enhancing flavor and allowing consistent low-heat cooking. “It holds heat well. So, really, you’re saving money. You can turn that burner down. You’re going to keep that simmer going most of the day, with a really low heat on cast iron,” he said.
Despite its frontier origins, Rollins stresses that cowboy cooking is accessible to anyone. “You can cook anything I ever cooked in my life — in the house, outside, on top of the house, in the barn,” he said. “It’s all simple and all easy. That’s what life is about for us and that’s what cooking is.”
