- ¾ cup (180g) full-fat sour cream
- 3 large eggs, room temperature
- ¾ cup raspberry preserves
- Fresh raspberries and mint leaves for garnish

- ¼ cup (60ml) hot water
- ¼ cup (85g) honey
- Zest of 1 lemon
Ingredients for Mascarpone Chantilly Cream:
- 1 ½ cups (360ml) cold heavy whipping cream
- ½ cup (60g) confectioner’s sugar
- 1 tsp vanilla bean paste (or vanilla extract)
- 8 oz (225g) mascarpone cheese
Instructions for Cake:
- Preheat oven to 325°F. Prepare three 8-inch round cake pans with baking spray and optional parchment circles.
- In a large bowl, rub lemon zest and sugar together for 2 minutes until it resembles kinetic sand, releasing citrus flavor.
- Add sifted cake flour, baking powder, and salt to the sugar mixture. Stir to combine.
- In a separate bowl, whisk olive oil, sour cream, and eggs until smooth.
- Combine wet and dry ingredients, stirring until batter is smooth.
