*Vinegar and balsamic vinegar are two apparently similar condiments, but in reality, they are very different. They differ both in how they are produced and in how they are meant to be used.

There is not one that is better than the other because they have completely different ingredients and are meant to be used in a completely different way in the kitchen.

Vinegar is just one of the ingredients needed for balsamic vinegar. Cultures of vinegar bacteria or a piece of leavened bread dough and a spoonful of vinegar already made are then added to the chosen raw material. Afterward, it is left in a dark and dry place for at least a month and it is ready. It is used to dress salads, meat, fish, but also for cleaning.

Balsamic vinegar should be used much more sparingly than wine or apple vinegar. Just a few drops are enough to immediately have an extra touch on the dish you are combining it with. The taste is much more intense and, as the name implies, is “balsamic”. Furthermore, unlike “normal” vinegar, the sweetish taste prevails and not the acid aftertaste. The most famous combination is with Parmigiano Reggiano: a unique and special marriage. But the balsamic, unlike that of wine, can also be used on desserts, in particular on ice cream.
